Twice Baked Potato Cassarole

This is the recipe my ex mother in law gave me. I would make it all the time when I had company over. It is the most delicious thing she and I ever made. I love how the bacon is so crunchy and good. I hope everyone gives this recipe a try.

Here's how to create a great-looking garnish:  Cut 2-inch-wide strips of wax paper, and arrange on top of casserole.  Then sprinkle the uncovered areas with cheese.  Next, remove the paper and sprinkle remiaing areas with chives and bacon.
 
8 medium-size baking potatoes (4 pounds)  Baked in over (about 1 hour)
 
2 cups (8 ounces) shredded Cheddar Cheese, divided
1 (16-ounce) container sour cream
1 ( 8-ounce) package cream cheese, softened
1/2 cup milk
1/2 cup butter or margarine, melted
2 garlic cloves, minced (option: garlic powder)
1 tablespoon chopped fresh chives
1-1/2 teaspoons salt
1.2 teaspoon pepper
6 bacon slices, cooked and crumbled ( I usually cook up more than 6)
4 green onions, chopped
1/4 cup chopped fresh chives
 
After potatoes are baked and cooled...  Peel potatoes, and coarsely mash pulp with a potato masher (I just used my little electric mixer to mix up)  Stir in 1 cup Cheddar Cheese, Sour Cream, and the next 7 ingredients.
Spoon into a lightly greased 13 x 9 inch baking dish.
 
Bake at 350° for 30 minutes or until thoroughly heated.  Sprinkle with remaining 1 cup cheese, bacon, green onions and chives...  ( Actually here, I had put all the topping on and baked everything for 30 minutes)
 
Yield:  8 servings
